Tucked into Waterbury's old Grist Mill, former home of the original Hen of the Wood, Gallus Handcrafted Pasta celebrates the artisan craft of fresh pasta. Our pasta program is served alongside local ingredients, approachable wines, and classic cocktails, all sourced with thoughtful integrity.

We’re excited to share and honor the history of our old mill. The space you see today is still the intimate and eccentric space you’re used to.  Seating options are mostly the same with a few more seats set aside for walk-ins. Our team brings decades of technique and experience to this historic space, creating a unique dining experience in Waterbury.

What's in a name?

The word Gallus has meanings like mischievous, bold, self-confident, and with swagger; but for us, our reference is the chicken, Gallus gallus domesticus, domesticated from the red junglefowl around 8,000 years ago. And given that Hen of the Wood used to live here, you could sort of say, “Gallus, the original Hen!”
